Here at Torre Rossa, every year we experience this journey with enthusiasm and respect for the land and its natural resources!
In spring, the olive trees are covered with tiny, delicate white flowers: it’s a special moment to walk among the rows and breathe in their light scent!
During the summer the olives grow, slowly changing color and soaking up the sun. Around October–November, the harvest season finally arrives.
As tradition goes at Torre Rossa, we still hand-pick the olives, gently shaking the branches and letting them fall onto the nets: it’s the most delicate way to respect both the fruit and the tree. The harvested olives go straight to the mill because freshness is the key to an excellent oil. Cold pressing preserves all the aromas and flavors of the countryside: from the fruitiness of freshly picked olives to the herbaceous note that makes your mouth water. Tasting the new oil is an experience that never gets old.
